Sharpening Steel – Round 30cm sharpening steels made for sharpening Victory knives. Made from chrome vanadium. 

Surfaces:

  • Medium Fine Grain: Typical for kitchen steels, this steel quickly forms a new burr at the edge of a blade for a smooth cut.
  • Fine/SuperFine Grain: Recommended for butchers who sharpen their blades on a grinding machine, and use a sharpening steel in addition to raising a burr for a smooth cut.
  • Polished surface: Used in slaughterhouses – performs the same as the fine / superfine grain.
